Pan Pizza | Basics with Babish

    This week on Basics, I'm taking another look at our beloved pizza and showing you how to make great pan pizza at home using a cast iron skillet, glass pie pan, or rimmed baking sheet.

    Ingredients & Shopping List
    + For the Pizza Dough (makes two 10-inch crusts):
    16 ounces flour, plus more for work surface
    2 tsp kosher salt
    2 1/4 tsp active dry yeast
    11 ounces room temperature water
    Olive oil

    + For the tomato sauce:
    1 28-ounce can of peeled San Marzano tomatoes
    2-3 cloves garlic
    Dried oregano and basil
    Red pepper flakes
    Kosher salt
    Freshly ground pepper
    Olive oil (optional)

    + Other toppings:
    Natural casing pepperoni, thinly sliced
    Low moisture, full fat mozzarella
    Fresh basil
    Freshly grated parmesan, for serving

    + Special equipment:
    Cast iron pan
    Glass pie pan
    Rimmed baking sheet (quarter size)
    Food processor or immersion blender for tomato sauce (optional)

                      Chicago style 'pizza' is a shit show. It doesn't know if it wants to be a casserole, a calzone, or a pizza with way, way too many toppings. But it fails at any of those attempts.
                      And hey, Chicago isn't the only style of pizza that sucks. That last bit about a pizza with way too many toppings? Yeah, that's crap pizza also. Fuck a bunch of 'meat lovers' or 'veggie lovers' or any other pizza that comes with so many toppings that the crust is soggy and underdone. Who ever thought up the idea that "if 2 toppings on a pizza was good, well 17 must be just that much better" wasn't a genius, they were an idiot!

                                        Tip for lazy people, like myself:
                                        Buy two pizza doughs that are already rectangular and rolled with the baking paper.
                                        Oil the baking sheet with olive oil.
                                        Unroll both doughs and transfer them into the baking sheet, one on top of the other.
                                        Press the doughs together the best you can.
                                        Top with toppings.
                                        Bake for 12mins on full whack (275C for my oven). Turn the fan on for the last 2 minutes, if you have one.

                                        BOOM, done!

                                                                                Question- shouldn't your dough have sugar? The yeast doesn't have any food to really convert, and the salt is going to slow down the process..

                                                                                    Hi - did anyone else follow this recipe and get seriously soupy dough at first? I ended up using half as much water to get the desired consistency but I also wasn't measuring on a scale.
