      @Esme Wayne Boston makes such shit bagels. We just moved here from NY and it's no comparison. Boston basically just makes bread in the shape of a bagel.

      Here in NJ, Manhattan Bagel has some of the best bagels, from the warmth of a jalapeno cheddar to the child-like indulgence of a chocolate chip. Magnificent.

    Skip the cornmeal, skip proofing in the fridge overnight. Once they're rolled and shaped you can go right to boiling them. The extra steps here do almost nothing. You're going to think they're too small and you need to let them rise before boiling them but they will expand quite a bit when you boil them. And 20 seconds per side is not enough in the water, try 50-60 seconds per side. Your bagels will be denser and chewier.

                Has anyone tried this? The ingredients in the description say instant or rapid rise yeast, but I’d think with a long rise (even in the fridge), you’d want regular bakers yeast.

                                            Sorry, but I think a 'true' handmade bagel should be be made from a rope that is wrapped around your hand and then rolled/pressed to make a seam. It gives it that overlapping 'knot' texture at one point, which gives it more variety of texture. When I was a kid I used to hang out at the local 'Bagel Barn' and watch them being made - we called the family that ran the place the 'bagel benders'. Simply punching a hole in the middle and stretching it out makes it more boringly uniform like a machine made bagel. But still, I would eat your bagel any day...

                                                                                  I had a feeling that these bagels would overproof given 2 tsp of yeast and overnight long proof and they sure did. These came out flat, overproofed, reeked of yeast, tasteless behind the malt flavor. I’d half or even quarter the yeast if I were to make these again. Better yet, stick to the serious eats recipe which actually happens to call for half the amount of yeast.
