                                                  I made his gumbo for the second time and it was really great.

                                                  I have a question about roux though - I have been using the super fast method from this video and it works great so is there any reason why so many people make it slowly? It seems crazy to me to spend an hour slowly doing what you can do in 5 minutes.

As a child of a half Cuban part white family, I’ve always loved a plethora of spices and flavors but loved the hotness and variety that the other spectrum of the Caribbean brought.                                                                                     Babish next time you come to Louisiana visit Acadiana area like Lafayette! The food is Cajun and different from food from New Orleans! Nola def has some good spots but you gotta get the real GOOD stuff
